Assistant Chocolatier

The chocolatier is mainly responsible for designing, preparing, mixing, coating and packaging chocolates and other assorted products, while following Food Safe protocols.

Job Purpose
The chocolatier is mainly responsible for designing, preparing, mixing, coating and packaging chocolates and other assorted products, while following Food Safe protocols.

Duties and Responsibilities
- Coating and garnishing of cream centres, caramels, and other products
- Preparing ganache fillings for enrobing (cutting ganaches)
- Spraying chocolate moulds with cocoa butter & preparing them for making chocolate shells
- Making chocolate shells and filling them
- Closing moulds
- Hand-rolling truffles
- Airbrushing moulds
- Helping in the enrobing process
- Tempering chocolate
- Sorting and packaging of the final products in proper boxes in accordance to the quality standards
- Consistently meeting daily production targets
- Ability to perform jobs with high degree of accuracy and precision
- Keeping cleanliness of equipment, machines, and workstations
- Examining products and recording results for quality control
- Cover front of house during breaks as needed
Knowledge
- 1 year experience in Chocolate Production
- Knowledge of food safety regulations
- Knowledge of COVID-19 regulations and ability to enforce when required

Working Conditions
Physical Abilities
- This position can be physically demanding. The ability to stand for long periods of time, bending and kneeling are necessary to perform the job.
- Must have ability to lift to shoulder height up to 30 pounds bags on occasion
- This role is located at the Shade Tree Chocolate Studio and will work in a climate-controlled environment.
- This role is primarily back of house with time spent in kitchen prep areas.
- There are physical hazards (such as burning oneself) and chemical hazards (cleaning chemicals) associated with this position.
